Hi, I’m Laura!  I’m a California girl raising my family across the country in North Carolina.  My husband, Chris, and I moved to cheaper pastures in the summer of 2007 when my daughter Maya was a year old.  We found and purchased a brand new house for a fraction of the cost for what a similar home goes for in the San Francisco Bay Area.  I’ve been a stay at home mom since we made the big move and have added a new addition to our family.  Jackson was born in January 2009.

The kitchen is the hub of our house.  As a stay at home mom with two small children, we rarely eat out, which translates to me cooking and preparing at least three meals and countless snacks per day. In early 2010, I became interested in feeding my family more whole foods and depending less on overly processed “fake food”.  Although, much of what you see on this blog will be focused on healthy options, I’m a strong believer in everything-in-moderation, so don’t be surprised by the occasional sweet treat or recipe containing evil processed or refined ingredients.

In addition to the challenges of providing round-the-clock healthy food for two picky children, I’m also presented with the the caloric limitations of my husband who is currently in the middle of a weight loss journey.  Chris is a calorie counting machine, which means all dinners must be under 500 calories.  I often add some basic nutritional information to my posts using myfitnesspal for calculations.  However, these calculations are for educational purposes only and can vary according to a particular brands product formulation.  Check product labels for more information and follow the advice of your healthcare provider.

    Your mom just told me about your blog. I think this is wonderful. I myself am always on the look out for heathier foods and cooking ideas. My cooking habits had already taken a more healthier change, but with the recent event I am searching out for more heart healthy recipes along with mind healthy ingredients. This is a great way for me to assist you in your search for fun healthy foods, and bring along the up and coming nutritionist (Jessi) to add value to your blog as well. Also a way to reconnect the family. Keep up the wonderful work your doing and I will be adding comments regularly.
